Cheesecake – Jude’s Cheesecake

Jude’s Cheesecake

  • 1 small pack digestive biscuits (approx. 300g) – crushed
  • 5oz/45g butter – melted (approx, depending on how many biscuits used)
  • 1 x 250g pack mascarpone
  • 1 x large pack light cream cheese (approx. 340g, depending on brand)
  • 1 tsp vanilla extract
  • 1 oz/30g caster sugar


  1. Add melted butter to crushed biscuits and stir to combine
  2. Leave the mixture to cool, and then tip into a cake tin with detachable base
  3. Press down the biscuit mix with a spoon to form an even base
  4. In a separate bowl, mix the mascarpone, soft cheese, sugar and vanilla extract
  5. Spoon the cheese mixture onto the biscuit base
  6. Chill for at least an hour (ideally a few hours)
  7. Top with fresh fruit and serve.
